The lusciously full body and scent of brioche, citrusand stone fruit flavors, held firm by beautiful acidity make us want to drink it every day. Oysters with a tangy mignonette, devilled eggs with debris,and mixed vegetable tempura are a few of our favorite starters for the Bollinger. As for entrees, try this lovely bubbly with sauteed halibut, and finishit with a butter, garlic and fresh thyme bath. A classic grilled lobster dinner wtih brown butter and lemon wedges will make your day. And if you’re feelinglike you deserve a treat, make it fried shrimp with a side of truffle fries. Made from 60% Pinot Noir, 25% Chardonnay and the rest Pinot Meunier,with 30% of the blend brought up in barrels, it boasts a rich, deep, medium to full-bodied style as well as terrific notes of lemon curd, crème brûlée,caramelized stone fruits, and hints of toasty nuttiness that develop with time in the glass. It’s a big, rich Champagne that stays balanced and pure. Beautifulstuff.
