Pour a generous glass to accompany a starter of octopus braised with tomatoes, potatoes, olives and capers. It may inspire an ay caramba or two! Greek style lamb meatballs are another delicious pairing option. And if meat isn’t on the menu, the pretty acidity of the Decero is lovely opposite a rich wild mushroom ragu tossed with fettucine and chunks of ricotta salata. The winds here skate across the soil-a mix of alluvial deposits and sandy loam over gravel-whipping up small remolinos, little whirlwinds of dust. The winery claims these remolinos are critical to the quality of their wines, keeping the grapevines dry and free from disease after it rains.
