Description
The Moillard wine estate – Domaine Moillard – spreads over Côte de Nuits and Côte de Beaune, from Vougeot to Volnay. Half of the wines produced on the estate are Premier Cru. The Chardonnay grapes for this astounding Bourgogne come mainly from parcels located in the Mâconnais. The south of Burgundy enjoys a sunnier climate, providing very rich and ripe grapes from vines aged 15 to 40 years in the limestone, calcium rich soils.Pressing and settling is done directly by the most experienced vine growers and only the best musts are then blended to craft a Bourgogne Chardonnay that is powerful, elegant and fresh. The cuvée is then seeded in yeast and chilled before being sent to our Savigny Les Beaune site for being fed into 228L oak barrels. Alcoholic fermentation takes place in oak barrels.Ageing in oak barrels for 10 months, 25% new oak, with regular stirring and ullage to gain in richness and roundness.
